Today I feel like I need a choclate cake and then one with a melting filling. In the past I eat it in a famous restaurant here in the Netherlands and afther that totally hooked on this cake. Just wonderful. I can eat more then 2 of them but it's better not to do that because it's not particularly good for the calories.
What do you need?
100 grams of butter
2 tablespoons cocoa
One bar (100 gram) plain dark chocolate
2 eggs
2 egg yolks
100 grams of sugar
Butter for greasing
100 gram flour
6 Soufflébowls
Preheat the oven to 180 degrees. Grease the bowls with some butter and dust with cocoapowder.
Melt the butter and chocolate together in au-bain-marie pan. If the chocolate is completely melted and smooth you let it cool for 10 minutes .
In the meanwhile beat the eggs with a mixer, egg yolks and sugar until you've got a fluffy pale yellow mixture. Fold the chocolate from there. Sift the flour over the batter and fold these through.
Tip: First beat the eggs separately from the other ingredients until fluffy substance and add it later to the rest . Your cupcake will be airy.
Pour the batter into the bowls and put them in the preheated oven and bake them between 12 and 15 minutes. If the twinkie has risen and the top is dry, they are usually good.
