If you made the Sate Ayam than you also have to make the sate sauce. Hereby I'll give you the recipe from my homemade peanut sauce aka sate sauce. Of course you can go to the supermarket or go to the grossery and buy a bucket ready-made peanut sauce without knowing what's inside. You just need to add hot water and voila .... peanut sauce is ready! Well, I don't like this. I'm more of selfmake food because I want to know what exactly inside my food so I always make my peanut sauce by myself.
3 small shallots
1 small red pepper (if you like spicy)
300 grams of roasted peanuts in brown fleece
3 kemiri nuts (do not eat it raw)
2 tablespoons thinly sliced Javanese sugar (gula djawah) or use instead of it brown sugar
8 to 10 tablespoons sweet soy sauce (soy sauce Aor soy sauce Kaki Tiga)
1 to 1.5 teaspoon salt
250 cc boiled water
250 cc coconut milk (from suit or canned)
Necessities
1 head of garlic3 small shallots

250 cc coconut milk (from suit or canned)
Preparation
- Discard the garlic and the shallots from their shell
- Put in a saucepan or frying pan a little bit oil and fry the garlic and shallots in their entirety in the oil together with the red peppers
- Saute until golden and then remove them from the pan and put them to puree in a food processor or blender or handblender
- Fry in the same pan the roasted peanuts and candlenuts for a few minutes and remove them out the pan and put in a separate dish. Candlenuts should be baked as they are poisonous when raw.
- Put the pasta back into the pan and add a little splash of boiling water and a dash of coconut milk into a mushy pulp. Now stir well.
- Add the peanuts, candlenuts and gula Jawa (Javanese sugar or brown sugar) into the blender and blend until this same pasta
- Add the peanut paste in the garlic and shallots paste.
- Add the soy sauce and maybe a little bit hot water and stir well. Always keep testing whether you have the right flavor. Possibly you have to add more herbs or soysauce until you get the desired flavor.
- You satay sauce is now ready
Serve your satay with this sauce and sprinkle some fried onions over the dish.
